Chia Seed Pudding
This recipe is a family favorite, packed with protein and nutrition, it's great for breakfast, snack, or dessert! :)
I grew up loving pudding! Chocolate, vanilla, tapioca, all of it! My husband says the chocolate version tastes just like the snack cups he use to get in his lunch box as a kid! My girls favor this as a healthy dessert before bed...the extra bit of protein also helps them to sleep well at night, too! Here are some of our recipes below, but we would love to hear about any flavors you might try as well!
Vanilla
Mix all of these ingredients in a pint sized mason jar:
1 1/2 cup of unsweetened almond milk
1 Tbsp chia seeds
1 tsp vanilla extract
Stevia (or honey) to taste
1/2 tsp glucomanan (we use the NOW brand from Amazon)
1 Tbsp protein powder (optional)
Screw the lid on the jar and shake well. This is a fun project for the kids to take turns doing! When everything is shaken good, mixed well, and your arms feel like pudding themselves, place in the fridge for several hours (the longer the better!)...at least 2 hours. Shake every now and then whenever you pass the fridge and feel like getting another arm work out. Serve with berries, nuts, or chocolate chips (we love all of these options! Heck, try them all together! SO YUM!)
Chocolate
Add 2 tsp cocoa powder to the mix and follow the directions above!
Chocolate Covered Cherry Chia
Instead of 1 tsp vanilla extract, add 1/2 tsp almond extract and 1/2 tsp cherry extract, 2 tsp cocoa powder, and 1 Tbsp grated dark chocolate. Shake and refrigerate.
