Sour Vitamin C Fruit Snacks

Our whole family loves these fruit snacks! Gluten free, healthy, and KOSHER to boot! It's a total win! I can't keep a batch of these long enough to say, "Hey, kids, we have fruit snacks!", so make sure to double this batch if you find your family loves these as much as our's does! Here's our version of these yummy gummies: Sour, Immune Boosting, packed with a Vitamin C power punch!

You'll Need:
3/4 Cups lemon or orange juice
3/4 Cups frozen fruit (we love strawberries, blueberries, and raspberries)
2 Tbsp Honey
Pure Stevia to taste
1 - 1 1/2 tsp Vitamin C powder (we use Trader Joes brand)
5 Tbsp Beef Gelatin (we love the NOW Brand bought here)

Directions:
In a small saucepan heat your lemon or orange juice over medium heat and add your berries. Cook until fruit begins to soften and thicken into a light compote. Add sweeteners and vitamin c powder and stir. Now you can either transfer to a blender (cool slightly first though, YIKES!) or use an immersion blender, which we find to be the easiest! When all your fruit is blended well, remove from heat and begin adding your gelatin 1 Tbsp at a time, whisking well between spoonfuls so you don't end up with large clumps. Then pour your sour, fruity, yummy puree into a 9x9in. cake pan and pop in the fridge for at least 30 minutes. If you have a fun mold that would work too! When our's set we just use a knife to make little squares and then put them into individual baggies. These are best kept in the fridge but can hold up well at room temperature, too! Just be careful on picnic days when it's a little warmer outside...you might want to keep these in an insulated cooler with an ice pack so they don't melt :)
