Coconut Milk Popsicles


Coconut Milk Popsicle

My kids LOVE these popcicles! Especially outside on a beautiful day like today! They are so easy to make and you can do so many things with them! Here's our recipe!

In a blender combine:
1 cup full fat coconut milk
1 cup unsweetened almond milk (we also love to use our homemade yogurt)
1 Tbsp Virgin Coconut Oil
1 banana
1 mango
1 cup of frozen mixed berries
2 Tbsp honey

Blend until well combined. Pour into Popsicle holders and freeze for at least 2 hours.

Derby Dip Style
You'll need:
1 cup Virgin Coconut Oil
1/2 cup unsweetened cocoa powder
pinch of salt
splash of Pure Vanilla Extract
Parchment paper

Melt your coconut oil at room temperature or in a warm water bath. Add cocoa powder, salt, vanilla, and stevia and stir until well combined. Dip frozen Popsicles in chocolate and place on parchment paper. Place back in freezer for about 10 minutes. The coconut oil hardens when frozen and it makes a yummy chocolate crunch on the outside! :)
