Ooey Gooey Chocolate Muffin In A Bowl
There are so many things I love about Trim Healthy Mama and this HAS to be one of my top 5! Since I switched to this amazing dietary lifestyle I have not missed out on a single indulgence! I get to eat all my sweets without any negative repercussions aaaand...they're SUPER healthy! This is a great breakfast for the gluten free, chocolate, sweets lover and it's full of superfood power and a great protein boost to start your day!
In a porcelain bowl or ramekin combine:
1 egg
1 Tbsp coconut oil
3 "doinks" of stevia
Cream together with the back of a spoon until well blended. It helps if your coconut oil is at room temperature.
Next add:
1 Tbsp almond flour
1 Tbsp unsweetened cocoa powder
1 Tbsp protein powder
1 Tbsp flax meal
1/2 tsp baking powder
1 Tbsp heavy cream
Mix together well.
Bake in oven at 350 ° for 8-10 minutes. You want the top to still be a little under done. I love to add berries to the top of mine with about 1/4 cup of homemade Greek yogurt!
Peanut Butter Chocolate Muffin
To make a peanut butter chocolate version replace the protein powder with 1 Tbsp Peanut Powder.
