Quick & Easy Creamy Tomato Soup
Being a homeschool family with 3 children 5 and under (and one on the way!), most days lunch needs to be quick and easy and on the table fast! This is one of my favorite go-to lunches that is speedy and healthy...a win win in my book! We love to pair this with a good ole fashioned grilled cheese , add whole wheat noodles, or just pair it with a simple green salad!
Combine the following ingredients in a medium saucepan over medium high heat:
1 small can tomato sauce
1 medium can diced tomatoes
1/2 cup almond milk
2 Tbsp heavy cream
2-3 Tbsp Nutritional Yeast
Sprinkle of garlic powder, onion powder, and salt and pepper to taste
Small handful of finely chopped fresh basil or about 1 Tbsp dried basil
Bring everything to a boil and then reduce to a simmer. Cover and let simmer between 10 and 20 minutes. Use an emulsion blender to cream everything together. Sprinkle with finely shredded mozzarella if you like!
This recipe serves 3 little ones and myself :)
